Chocolate-Peanut Butter-Banana Granola
If only everyone could be this excited about eating fruit…
Everyone this is Corey, my sister’s boyfriend’s nephew… We love him, especially Chandler.
After babysitting Corey the other day and watching him dance while eating bananas, I decided it would be a good idea to try a recipe using bananas that would cause me to dance too… Which, unfortunately isn’t too hard to do, considering how much I love food.
I have always wanted to make granola. I do not know why it has taken me this long to finally make it because it really is a cinch to make and so much tastier than store-bought, processed granola.
I always categorize granola as more of a “dessert” snack. Let’s just say, it isn’t necessarily a snack I want to mindlessly munch on while reading or watching TV… But will that stop me from doing it? Probably not.
This granola is sweet, crunchy, and salty, with a touch of cinnamon. The cinnamon really brings out the banana flavor in the granola too, so I hope you like potassium! On a side note, my neighbor told me if you consume cinnamon every day it will cut down your sugar cravings… I wonder if this recipe cancels that theory out?
Anyway, make this granola today! Sprinkle it on top of some yogurt and fruit to start your day off right or even as a way to end the day!
Chocolate-Peanut Butter-Banana Granola recipe slightly adapted from Sugar Plum:
1 large ripe banana
¼ cup firmly packed brown sugar
3 tablespoons natural peanut butter
2 tablespoons water
1 tablespoon unsweetened cocoa powder
2 teaspoons honey
1 teaspoon vanilla extract
¼ teaspoon cinnamon
¼ teaspoon salt
1 ½ cups old fashioned oats
½ cup coarsely chopped dried banana chips
- Preheat oven to 325 degrees F. Butter a cookie sheet.
- In a large mixing bowl, mashed the banana up; whisk in brown sugar, peanut butter, water, cocoa, honey, vanilla, cinnamon, and salt until well combined. Stir in oats until combined; spread out evenly on cookie sheet.
- Bake for 40 minutes, stirring every 8 minutes or so, until crisp. Remove pan from oven and stir in banana chips and chocolate. Cool completely before serving.
