Strawberry Yogurt Popsicles
It finally feels like Spring! Thank goodness because I am ready for warm weather. All I’ve wanted this past quarter is to walk down the street wearing shorts and flip-flops without freezing. Is that too much to ask? It can be an early graduation present?!
My need/excitement for summer was overwhelming and I bought popsicle molds a few weeks ago… But looking back on it, this was kind of a silly purchase, considering the last thing I want to eat is a frozen treat when I myself am a frozen solid.
But the weather only had to hit 60 degrees F last week before I put my molds to good use…. Which actually brings me to my next grievance, iPhone’s weather app. Why does the little app icon always say 73 degrees and sunny? It’s just plain rude when it’s 40 degrees and storming out.
But back to my main point, popsicles. I like frozen treats, a lot, but eating ice cream every day isn’t in my bikini body’s best interest, so I made a healthy alternative to satisfy my sweet tooth- Popsicles.
Since it’s strawberry season and I am a sucker for anything Greek, I combined vanilla Greek yogurt and strawberries to make the ultimate icy treat. It’s only requires two ingredients and two steps! So healthy!
Strawberry Yogurt Popsicles by The Bite-Sized Baker:
2 cups strawberries, hulled and halved
12 ounces vanilla Greek yogurt
- Combine strawberries and yogurt into a blender and pulse until strawberries are almost pureed but not liquefied.
- Pour strawberry-yogurt mixture into popsicle molds and freeze until solid.

These look tasty, and sooo easy!
